Now that we've said goodbye to 2025...Say Hello! to 2026 in style with this fruity, flavourful little number from the amazing guys over at Pomus in Margate. 

WINTER BERRY NEGRONI

The Winter Berry Negroni is a refreshing yet indulgent twist on a classic, built for the gentle shift from December’s decadence into January’s cooler clarity.

It begins with a London Dry Gin infused for two days with elderberry, redcurrant, and blackberry, a bright, jewel-toned blend that brings depth and wintery richness. This is paired with Schofield’s Dry Vermouth, slowly infused with white plum for a full week to draw out its soft, delicate sweetness. A final touch of Sipello ties everything together with a subtle, bittersweet lift.

The result is a beautifully balanced Negroni variation: crisp, aromatic, and layered with fruit, offering a clean, elegant palate cleanser to welcome the new year.

This month’s Negroni for our Negroni Society subscription comes courtesy of Pomus, a neighbourhood restaurant, wine bar, bottle shop, and pantry haven located in The Centre, Margate. The name “Pomus,” drawn from the Ancient Greek word for “fruit tree,” reflects the venue’s deep connection to nature and seasonality.

Led by entrepreneur and hospitality veteran Ryan Jacovides, Pomus celebrates Kent’s rich local produce with an inclusive, low-waste menu and a thoughtfully curated selection of award-winning wines. The team works closely with regional suppliers including Whitstable Oysters, Cheesemakers of Canterbury, Chapel Down, and Westwell to create a warm, welcoming space for both locals and visitors.

“Margate has been a holiday tradition for my family for generations,” Ryan says. “Even back then, I knew I’d open a bar here someday. Now that I’ve made Margate home, it finally feels like the right moment to bring that long-held dream to life.”

Their Winter Berry Negroni is a light yet indulgent way to start the new year — bright, fragrant, and effortlessly refreshing. The perfect palate cleanser after December’s rich feasts and heavier pours.

TO SERVE YOUR WINTER BERRY NEGRONI

  • Pop the pouch in the freezer for 40 minutes until nicely chilled.
  • Pour into an ice-filled tumbler or old-fashioned glass.
  • Garnish with a slice of orange, slipped into the glass

DRINK!

THE RECIPE

  • 25ml London Dry Gin infused with Elderberry, red currant and blackberry
  • 35ml White Plum Infused Schofield's Dry Vermouth
  • 15ml Sipello


To recreate this delightful Negroni variation, simply follow the instructions below:

  • Add the 3 ingredients above to an ice-filled cocktail shaker and stir for 60 seconds until well-chilled and slightly diluted.
  • Pour into an ice-filled tumbler or old-fashioned glass.
  • Garnish with a slice of orange and serve
  • If you want to prebatch your drinks to serve quickly later, just add another 10ml water to the ingredients above, to ‘pre-dilute’ the blend
