Estate Rosemary Highball

The amaro season does not begin with a wall of bitterness. It eases in. ESTATE, built long with tonic and rosemary, is that first serve of the autumn. The English Pinot Noir base gives it a tannic structure that stands up to tonic without tasting thin or washed out.

Ingredients

  • 50 ml ESTATE English Sweet Vermouth
  • 100 ml light tonic water
  • 3 sprigs fresh rosemary

Method

1. Build over ice

Fill a tall highball glass with packed ice. Pour the ESTATE over the ice.

2. Top with tonic

Top with tonic water, pouring slowly down the side to preserve the carbonation. Give it one gentle stir.

3. Garnish and serve

Clap two sprigs of rosemary between your palms to release the oils and place them on the ice. Serve immediately.

Tasting Notes

The Gusbourne Pinot Noir backbone carries the botanical complexity of orange, wild cherry bark and English hops across a long, refreshing frame. Tonic lifts the bitterness; rosemary grounds it in the herbal.
