This modern classic comes from our good friends at SCHOFIELD’S Bar in Manchester. Recently named the UK’s top bar at the Top 50 Cocktail Bars Awards (https://www.top50cocktailbars.com/), SCHOFIELD'S Bar has solidified its place as one of the best. They also picked up the 2023 CLASS Award for Best Bar and Best Northern Bar.

If you're familiar with Asterley Bros, you’ll know we've been working with the SCHOFIELD brothers since 2019 when we partnered on the creation of our SCHOFIELD'S Dry Vermouth and Joe Schofield also joined our team as Creative Director.

SCHOFIELD’S BAR

SCHOFIELD’S bar opened in 2021 on the ground floor of the art deco Sunlight House on Little Quay Street. Run by the bartending brothers Joe and Daniel Schofield, it is highly regarded for its classic cocktail menu and impeccable service.

They’ve climbed the ranks of the Top 50 Cocktail Bars, to land in the top spot in just a year. And well deserved we say too.

A nice little touch is that they’ve shared some of their favourite books for guests to read while enjoying a drink on their own, paired with cocktails. You can also buy the book along with a bottle of the ever impeccable (if we do say ourselves) SCHOFIELD'S Dry Vermouth to recreate the experience at home.

Some of the book and cocktail pairings include Casino Royale with a Vesper Martini, Cocktail with a Singapore Sling, and The Old Man and the Sea with a Mojito.

THE DRINK

Introducing the Watermelon Negroni, a fresh twist on the classic cocktail to celebrate the final days of summer. Bursting with the juicy sweetness of ripe watermelon, balanced by the bitterness of Campari, this drink captures the end of the summer season.

It’s light, refreshing, and perfect for sipping as the warm weather fades. Whether you're soaking up the last bit of sun or toasting the coming of autumn, the Watermelon Negroni is the ideal way to say goodbye to summer.

TO SERVE YOUR NEGRONI

  1. Pop the pouch in the freezer for 30 minutes until nicely chilled
  2. Pour into an ice-filled tumbler or old-fashioned glass
  3. Garnish with a slice of orange, slipped into the glass
  4. Drink!

THE RECIPE

  • 25ml Watermelon Gin
  • 20ml Estate
  • 20ml Campari
  • 5ml Monin Watermelon Syrup


To recreate this Negroni, simply follow the instructions below:

  • Add the ingredients above to an ice-filled cocktail shaker and stir for 60 seconds until well-chilled and slightly diluted
  • Pour into an ice-filled tumbler or old-fashioned glass
  • Garnish with a slice of orange and serve
  • If you want to prebatch your drinks to serve quickly later, just add another 10ml water to the ingredients above, to ‘pre-dilute’ the blend
