Ideal for a hot summer’s evening as the sun sets, the Strawberry Negroni from Passing Fancies in Birmingham brings a refreshing twist to the classic cocktail. The cocktail retains the Negroni's signature bitterness but is lightened by the aromatics and sweet and tangy notes of fresh strawberries.

PASSING FANCIES

Opened in 2022 by Matt Arnold and Eve Green in Digbeth, Birmingham's historic Custard Factory, Passing Fancies has quickly risen to number 3 on the Top 50 Cocktail Bars list with its dynamic and ever-changing menu. The cocktail menu changes on a regular basis, each time with a different theme. One favourite of ours is the Adult Ribena that won the Class Bar Cocktail of the Year Award.

Passing Fancies has also gained a reputation of fostering community spirit in the local area by emphasising transparency and collaboration. Sharing openly their recipes including methods and ingredients they use and allowing bartenders from different bars to operate their more advanced equipment such as their rotavap and centrifuge.

THE DRINK

The Strawberry Negroni featured this month from Passing Fancies is made using fresh strawberries which really lightens and lifts the classic Negroni, adding complex aromatics and flavours from the hundreds of volatile compounds contained within the humble strawberry.

The Negroni is simply blended with a good portion of strawberries then passed through a cheesecloth. Keep in the freezer until ready to serve.

TO SERVE YOUR NEGRONI

  1. Pop the pouch in the freezer for 30 minutes until nicely chilled
  2. Pour into an ice-filled tumbler or old-fashioned glass
  3. Garnish with half a strawberry, slipped into the glass
  4. Drink!

THE RECIPE

  • 30ml Campari
  • 30ml Tanqueray Export
  • 30ml Asterley Bros Estate
  • 80g Fresh Strawberries
  • 10ml water


    To recreate this Negroni, simply follow the instructions below:

    1. Combine the above and blend
    2. Strain though a cheesecloth
    3. Place in the freezer for 30 minutes
    4. When ready to drink, pour into an ice-filled tumbler or old-fashioned glass.
    5. Garnish with half a strawberry and serve
