South London Amaro Sour

The amaro sour recipe is a genuinely underrated category, and Dispense Modern British Amaro suits it exceptionally well. Lemon and honey cut through the bitterness, and an optional egg white or aquafaba gives the drink a silky, aerated texture that makes it feel more substantial than its ingredients suggest.

Ingredients

  • 45 ml Dispense Modern British Amaro
  • 20 ml fresh lemon juice
  • 10 ml honey syrup (1:1 honey and water)
  • Egg white or aquafaba (optional, 15 ml)

Method

Step 1: Dry shake

Add all ingredients to a shaker without ice and shake hard to emulsify.

Add ice and shake again until very cold and frothy.
