- 45 ml Dispense Modern British Amaro
- 20 ml fresh lemon juice
- 10 ml honey syrup (1:1 honey and water)
- Egg white or aquafaba (optional, 15 ml)
Method
Step 1: Dry shake
Add all ingredients to a shaker without ice and shake hard to emulsify.
Step 2: Shake with ice
Add ice and shake again until very cold and frothy.
Step 3: Strain & serve
Fine strain into a chilled coupe and garnish with a lemon twist if you like.
