Schofield's & Tonic cocktail recipe

Schofield's & Tonic

Vermouth and tonic is one of the better-kept secrets of the low-ABV drinks world. Schofield's English Dry Vermouth — aromatic and slightly saline — holds up beautifully against tonic's gentle bitterness, making for a refreshing long drink that is lower in alcohol and considerably more interesting than most alternatives.

Ingredients

  • 60 ml Schofield's English Dry Vermouth
  • 120 ml tonic water
  • Lemon wheel (garnish)
  • Thyme sprig (optional garnish)

Method

Step 1: Build in the glass

Fill a highball glass with ice. Add Schofield's and top with chilled tonic.

Build in the glass — Schofield's & Tonic

Step 2: Stir & garnish

Stir briefly, then garnish with a lemon wheel and optional thyme sprig.

Stir & garnish — Schofield's & Tonic

Step 3: Serve

Serve immediately for a crisp, low-ABV aperitif.

Serve — Schofield's & Tonic

Tasting Notes

Crisp and lightly herbal, with Schofield's botanical complexity making itself known quietly against the tonic's clean effervescence — more interesting than a standard G&T.
