There's something about cucumber and dry vermouth that just works, and we've never quite found the ceiling on that pairing. Part of our Summer Highballs collection, three tall serves built for long afternoons and warm evenings. This Collins riffs on the classic template but lets Schofield's do the heavy lifting where gin usually sits.
The elderflower soda brings a gentle sweetness that rounds off the lemon without needing any syrup. It's clean, it's light, and it tastes like someone bottled an English garden.
Ingredients
- 45 ml Schofield's English Dry Vermouth
- 15 ml fresh lemon juice
- 100 ml elderflower soda
- Cucumber ribbon (garnish)
Method
Step 1: Muddle
Lightly press two cucumber slices in the base of a tall glass to release their juice. No need to smash them to bits.
Step 2: Build
Add ice, pour in the Schofield's and lemon juice, then top with elderflower soda. Stir gently once.
Step 3: Garnish
Thread a long cucumber ribbon onto a cocktail pick or drape it inside the glass. Serve cold.
Tasting Notes
Clean and aromatic, with Schofield's chamomile and citrus peel notes wrapping around the cool cucumber. The elderflower soda adds gentle floral sweetness without taking over. Feels like a garden in a glass.
