Rhubarb does something wonderful when it meets sweet vermouth — the sharp, almost sour fruitiness cuts straight through the richness and opens the whole drink up. We wanted a spritz that felt properly seasonal, and this one lands right where spring should: pink, tart and fizzy, with just enough depth from Estate to keep things interesting.
Ingredients
- 45 ml Estate English Sweet Vermouth
- 20 ml rhubarb syrup
- 90 ml dry prosecco
- Rhubarb ribbon + lemon twist (garnish)
Method
Step 1: Combine
Fill a large wine glass with ice. Pour in Estate and rhubarb syrup, then top with chilled prosecco.
Step 2: Stir gently
Give one slow stir to bring the colour through without losing the fizz.
Step 3: Garnish and serve
Thread a thin rhubarb ribbon onto the glass and add a lemon twist. Serve immediately.
