A sparkling twist on the classic Negroni, swapping gin for prosecco and letting Estate sweet vermouth take centre stage.

Estate Negroni Sbagliato

The Sbagliato started as a happy accident — a bartender reaching for prosecco instead of gin — and it became one of the great Negroni variations. We make ours with Estate sweet vermouth as the backbone, its dried-fruit richness balancing the Campari perfectly. Ingredients

  • 45 ml Estate English Sweet Vermouth
  • 30 ml Campari
  • 60 ml dry prosecco
  • Orange half-wheel (garnish)

Method

Step 1: Combine

Fill a rocks glass with ice cubes. Pour in the Estate sweet vermouth and Campari.

Step 2: Top

Slowly pour chilled prosecco over the back of a bar spoon so the bubbles stay lively.

Step 3: Garnish and serve

Give one gentle stir to marry the layers, then drop in an orange half-wheel. Drink while the fizz is still fresh.

Tasting Notes

Bitter-sweet and effervescent, with Estate's dried-fruit depth rounding out the Campari bite. Lighter than a stirred Negroni but just as complex.
