As the light shifts and spritz season fades, the amaro comes into its own. DISPENSE was built for exactly this moment. Its modern British bitterness carries the echo of Nicholas Culpeper's 1653 London Dispensatory, layered onto a Sicilian family recipe. This built-rocks serve lets that complexity unfold slowly as the ice melts.
Ingredients
- 50 ml DISPENSE Modern British Amaro
- 10 ml sugar syrup (2:1)
- 2 dashes Angostura bitters
Method
1. Build over ice
Add the sugar syrup and bitters to a rocks glass. Pour over the DISPENSE, then fill with a large ice cube.
2. Stir briefly
Stir for 15 seconds to chill and dilute slightly, bringing the bitterness into balance.
3. Garnish and serve
Twist a strip of orange peel over the surface and place it on the ice. Serve as the evening turns.
Tasting Notes
Opens with citrus-spiced brightness before the layered bitterness takes hold. Gentian and wormwood emerge through the melt, finishing with a long tannic dryness from the English Pinot Noir base.
