Passion fruit and dry vermouth is one of those pairings that sounds odd until you try it. The sharpness of the fruit cuts right through Cunard's botanical dryness and you end up with something that tastes genuinely tropical without being sweet. We first tried this combination during a particularly warm bottling day last summer, and it's been on our list to publish ever since. It's the sort of drink that makes you wonder why it isn't already a classic.
Ingredients
- 45 ml Cunard English Dry Vermouth
- 1 fresh passion fruit, halved
- 10 ml fresh lime juice
- 100 ml sparkling water
Method
Step 1: Scoop
Scoop the pulp from one passion fruit half directly into a tall glass. Save the other half for garnish.
Step 2: Build
Add ice, pour in the Cunard and lime juice, then top with sparkling water. Give it a brief stir to distribute the passion fruit through the drink.
Step 3: Garnish
Perch the remaining passion fruit half on the rim of the glass. Serve immediately.
Tasting Notes
Tart and aromatic, with the passion fruit's tropical acidity pulling out Cunard's chamomile and citrus peel notes. The sparkling water keeps it light and crushable, with a clean dry finish.
